I grew up showing horses around the country and have gained a little over 500 hours shadowing equine vets in the past 8 months. I also have about 150 hours volunteering in animal rescues and fostering sick dogs. But really, make sure you have the pre-reqs you need for vet school and if not, take the one you need. Otherwise physiology would probably be marginally more helpful than anatomy, probably because it won't really change much between animal and human as opposed to anatomy (some different body parts and terminology).
