The enemies that way are intended for you to fight a little bit later. You can get good if you want to, but there are 3 routes to take from fire link and the skeletons are the middle point in difficulty. Go to the cliff side on the right with tge soldiers if you want to go the intended/easier route.

I think "Firelink Shrine" refers to "a shrine where the Fire is/was linked" rather than one, specific, unchanging place. So yeah, it's not the same one as the one from DS1. Firelink Shrine of DS3 looks more like Nexus than Firelink of DS1. And DS3 Firelink Shrine built on lordvessel.
