If you run without a thermostat it would not let the car get up to operating temperature for a long while.The reason they did this is they wanted the oil to be hotter and the exhaust gas temps to be lower. By having lower exhaust gas temps they were able to run 20% exhaust gas in the cylinder on the compression stroke rather than the normal 10%.
