The boss isn't entirely random. It's determined by the number of coins you have if I remember right. Even for slime, odd for whale. You can also skip the boss level and go straight to the ghost one if you get through the ice one fast enough.

Agreed. Junimo Kart is still utterly awful. Everything about Stardew is relaxing and rewarding. Except for Junimo Kart. It’s comparable to the flappy goat achievement. It’s just not fun, at all. The rework is no better. It seriously needs to be less punishing on the tight jumps. This is one achievement that will be avoided.
